To provide safe poultry products it is necessary to chill the birds quickly after killing. Water based chilling is most common and is very effective. During the chilling process some water is absorbed into the flesh of the bird. After processing and packing the resulting fluid, a mixture of blood and water known as "chicken wash", is released into the package.

Because free water provides a good medium for bacterial growth and because no-one wants chicken wash all over their kitchen bench, quality presentation of poultry products is important.
